Chicken Stir Fry - easy

Ok so I made my new recipes for the week. It is really hard to remember to take pictures of these before I devour them! that Fast Fix Family Foods book is awesome! We have yet to try a recipe that we don't like in it! I would highly suggest picking it up. Amazon anyone? It'll be worth it I promise!

This week we had a mishap of leaving (by we I mean my very good looking night and shining armor) the freezer slightly open and had oodles of chicken to cook up. I went to my handy recipe book and I chose a chicken stir fry. there are two in the book so I chose the one that took 10 minutes to make because I was short on time before I had to hit my class (1 class left.. can i say hoo-ray!) So here we go...

1 rotisserie chicken - take apart and shred chicken
1/2 cup of frozen peas
1 - 8.8 oz pack of cooked brown or whit rice
1/4 cup of bottle stir-fry sauce (of your preference)
package oven-roasted sliced almond

Cook rice

In another pan add stir-fry sauce, chicken and peas. Cook until warm and evenly coated. (I added a little bit of water just to make sure it coated everything and it wasn't as Strong) serve over rice. sprinkle some almonds on top and viola.. there you have it! There is your 10 minute meal!!!!

Now here is what I changed
first I boiled my own chicken so it took a little bit longer than 10 minutes. I also used frozen mixed veggies instead of peas. It gave it more flavor. I also used Jasmine rice instead of white or brown. YUMMY.

Bryce Loved this and so did I. You really cant lose with this book. oh and remember everything I make is GLUTEN/DAIRY free. (although I give you the real recipes)

This makes 4 servings and for all of my fellow pinkboxingglove girls this was 311 cal per serving. YUMMY

Guess what I got?????

Yes you are right I got my BUMPIT! I am so excited. After 7 long waited weeks the package finally arrived! (please don't laugh. This was early in the morning and my first time using it, no make up, not dressed, not even brushing of the teeth. Hey at least I waxed my eyebrows)











Well Now that we all have our laughs of the day I will recap what has gone over the weekend. Friday was my last class. I still have 2 more Tuesday night (why oh why??) and it was good. I talked to the teacher and he passed me. He knew I wasn't going to be there next week (which is the final.. hey I didn't know about it until I made my camping trip.. camping totally takes prescience) I stayed after class to take what I thought was going to be a rigorous final (dripping with sarcasm) which he informed me that I passed, he wasn't worried and there was no final for me! YAY! I did stay and talk to him about how I thought he was very informative with the class. Being in the hair business already for several years I knew alot of the stuff he already taught. He made things interesting. it was a fun class.. for the most part.

Saturday I woke up bright and early due to some very noisy people! Bryce had another paintball tournament and we had bunches of people here and packing up 'crap' (and by crap I mean gear, tables, shade tents... you get the idea) and then my prince charming came down and kissed me goodbye like he always does. So cute. They did take 2nd place. He had loads of fun and is kind of sore, not nearly as bad today as he was last night. He also left me a note on the desk with a 100 dollar bill. I was going to pack up what I could in our trailer for our camping trip (the count down is on..) and clean and do a few other things. He just wanted me to enjoy myself. he told me not to worry about cleaning or the trailer and to go shopping. AWWWWW.

I did however spend the morning cleaning. Sanding gets EVERYWHERE.. even when you have the room blocked off. it was vigorous work. After about 5 hours of doing so I showered and went shopping to stock up our cute little trailer for next week. We completely emptied it out and of course I have another full week and don't want to do it all last minute. I just wanna pick up and go on Friday. Here are some pics of our finished room. Yes it does not have borders or carpet but for a VERY long time it is going to remain my scrapbook room and Bryce work room. Our time to spend together but be doing our own things. it is going to be awesome. we still have shelving to do and a few other things but just minor work. I present...

After all Loading and cleaning the trailer I came in and asked Nikki (Bryce's sis.. Julian, Nikki husband, also plays paintball) if she wanted to go shopping. I had money to burn! We spent a few hours shopping and hit up dinner. I bought a cute new top that is very much springish and a tank top to go under it. We had lots of fun!

Now we are here to Sunday, which we have more work ahead of us. We are heading out with Brittany and Eddie to see the place we are going to go camping. Bryce also want to go to the gun show (I will stay behind...)

Oh and during the week, I had some bad tension headaches so Bryce found our E.T. This is what we do in our spare time..


Oh and yes he totally needs a hair cut! He needs to hire a new hairstylist.. I wonder who that could be! I know I have abandoned him.

Birthdays, Basements and More

It is Wednesday already? How time flies! This week has been oodles amounts of busy! Tonight is the only night that I actually have nothing to do and then back to a full schedule until at least Sunday.
Easter was ok. We are not ones to celebrate some of the holidays. We always go over to Bryce's aunt but I think everyone was way too busy so no one really showed up. Bryce and I stayed for a couple of hours but for the most part we finished our room in the basement. This house is over 25 years old and yet the basement was never completed. This room in the basement is 'our' room. He has his work bench in there that he tinkers with whatever it is he tinkers with (laser pointers anyone??) and I will have my scrapbook table in there. We will also have a food storage unit in there and such. Now we are in the process of transferring everything in to the new room. Bryce is making me a cute custom scrapbook table with whatever I want so of course I will have my scrapbook stuff boxed up for a few more weeks (sniff sniff, and I thought I was on the verge of getting caught up)
My brother, Rob had his birthday yesterday and my co worker Jen had hers on Monday. We went to chilli's for Jen and of course they sang happy birthday. We had lots of fun with just the girls. I tried to pull the singing thing on my brother but he just wasn't having it. I don't get to see my brother very much because he work odd hours and in 14 hours shifts so I jumped at the opportunity to spend time with him. Lunch was enjoyable and he love his gift of 2 economy size bags of peanut M&M's!
School is almost over for this semester. I am glad, I do not care for my communications class. I have 2 more left and 1 left for my Friday night class. I am taking the final this Friday because next Friday we will be camping!!!! and I wont be there. The countdown is on! Oh and I got my grade back from my presentation and I got a 95.
Right now it is raining outside. Most people don't care for it but I love to turn everything off and listen to it hit our aluminum roof.. It is wonderful!

Wedding Hair

Well I guess here is my chance to show off something that I LOVE DOING and I THINK I am good at but I have to say that I am a bit disappointed how these turned out. Usually I am really excited about the hair and go to grab my camera and realize I have forgotten it. Sound familiar?
I am beyond bummed out with these but in my defense I DID NOT HAVE A CONSULT! usually I will get in a consultation with the bride before the day of the wedding/bridals in which I will actually go through with them their wants and desires and then I will actually do the hair, make sure the veil fits and it is everything she wants, see if there are any changes etc.
I received this call on Tuesday night about the bridals for Friday and the wedding for sat. I unfortunately could not get off work on such short time notice for Friday but I was able to haul my butt out of bed at 5:30 in the morning on Saturday, this was a VERY EARLY morning wedding here.
I guess I am fishing for compliments to make me feel better about the situation (think positive, the bride didn't scream in horror!)

All in all it was fun and they turned out adorable, although I am still disappointed in myself. they came out well considering the circumstance. Now do I throw the check away because this isn't my greatest work? I don't know, opinions please?

Where have I Been?

Well over a month ago when I made a resolution to start make 1 new recipes (which I have been doing well at, I just haven't posted them all) I bought a book from the desseret book outlet center down the street from our house that is going out of business. Now we all know we get these books and they go in our cute little cupboard that is above the fridge that no one can reach right? Well I thought I would try this one. hence the commitment. This book is awesome! It has over 400 recipes, all with pictures! and the nutrition facts! It has quick (30 minutes) Quicker (25 minutes) Quickest (20 minutes) recipe. Recipes you can do with your kids. Recipes that your mom used to make back in the day but quicker. Recipes for parties. Recipes for healthy people. Recipes that are all based on certain frozen food (i.e potatoes, chicken fingers, fish stick, etc.) One pot recipes (supposedly to where you do everything in one pot, quick clean up) Stuff you can make that your kids will eat and then things to add to it after you serve them up that will make it more filling and healthier for you as an adult. Anyways, enough of my going on and on here it is: the better homes and garden Fast Fix Family Food.

My Co-worker Katie even bought this book (correct me if I am wrong!) for 1.99 used on amazon plus s/h. She took it home over the weekend and made these apple glazed pork chops in here and the monkey break and said they were yummy. So if you ask, this is where I have been getting my recipes from. It really is amazing and has some yummy food!

This last week I did do a new recipe and as we speak I have a new one on the stove for tonight. last week I did what was called 'garden pasta' that has been looking mighty yummy and it was! It was quick and easy. The recipe is posted below.



For those of you who don't know, Bryce is on a very strict diet (kind of) He cannot have Gluten (wheat, oats and barley so to speak) and dairy. If he does cross over that line he gets very sick. As his personal hired/paid cook (I wish) I make sure everything we eat he can eat. So most of these recipes in the book ask for pre-made this and pre-made that. For Bryce I make the majority of this stuff for him (hence the McCormick's sauce for this recipe instead of store made: Store made has Parmesan cheese in it) so a mental note: All of the things I make are gluten/dairy free!!! If you want to try low carb dinner but what to have pasta, use gluten free pasta. It looks the same, there is a difference in taste but it is not bad. oh and the Gluten free cake is AWESOME. I would eat that over regular cake anyday! I made one for Bryce last time and ate half of it myself. Ha ha. any whoo.. just a mental note.

Ok now over to the weekend. We had a fun filled weekend of birthday parties and gardening. Now that I have told everyone that I need to tell that I live with Bryce I can talk about it openly. This year we started a garden, we did one the first year we were dating but we put in a back yard last year and didn't have time for it. SO far we have raspberry, grapes, blueberries, peas and beans. as soon as they start to sprout up I will take pics. This week Bryce has had the week off so we are re-doing the deck. It has been rainy so we haven't gotten anything done on it yet besides ripping it apart. We plan to have the backyard of the century this year where we will have many bbq's and parties. We are trying hard to repair this deck so our new bbq and patio set will look nice on it. We also plan to have a fire pit in this year (crossing our fingers... and toes).



In this all where do you ask am I? well I am the cute girl behind the camera. I will make sure I get a pic of her next time. I make sure that handsome man has yummy food and stay out of his way so he has tons of energy to work. I tend to be a distraction to him.

I guess since the week is almost over we have a fun filled weekend of getting the trailer cleaned and ready to go for our camping trip (score) and I also have wedding hair that I will definitely post pics for you to see. I just got the call on tues for it so I didn't have time to do a consultation with the girl but I hope it is a great success!
Now as far as my 'what the hell post' hopefully I will get a bit more sleep tonight (I have been suffering with something that mimics insomnia for the last 4 night) and I wont be so damn cranky tomorrow. :)

Garden Pasta



4 ounce of spaghetti, linguine, angel hair or pasta you desire
1 medium zucchini, sliced
2 tsp of olive oil
1 tomato of your choice (or several Cherri tomatoes)
4 TBSP of pesto

Cook your spaghetti, put aside. Heat Olive oil in pan, add zucchini and cook until it has a golden tint. Add in your pasta and pesto sauce. When heated add in tomato. Makes 2 servings.

Per serving: 389 cal.




Now I used McCormick's pesto sauce instead of the store pre-made kind and I also add fresh sugar snap peas and a little bit of chicken. If your man is like mine, pasta will not hold him over for more than an hour. So I just boiled chicken with some bullion and cut it up and added it in with everything else. This recipe was delish!

What the hell..???

Last night I realized on my way home that there is several things I have not done since I have moved. I still have yet to unpack more than 1 box. I haven't changes my address with the post office, for that matter I haven't changed my address with the phone company. Wait... I haven't even paid my bill! Since I have moved out my parents house I have been so concerned with making sure I get these things paid. There was a time I couldn't even pay for my car or my insurance (sad I know but it is a Loooooooonnnng story, I will save it for later) Since then I have made sure to always have my bills paid before I 'play'. Hell I better get on this.
I hate automative systems, like most people. I am trying to tell a tella-prompter my address. I am practically yelling into the phone and it is still not getting it right. I next yell operator. After several attempts (which I still have to pay my bill too) I get frustrated. I go to a 'live' person,yay! They take my address down and ask if there is anything else. I said yes I need to pay my bill which at this point she gets all my information and tells me there is going to be a $5 charge for her taking my info (which was already on file!!!) and getting my bill taken care of. Ok I shouldn't be worried THAT much about money but are you freakin kidding me??? 5 dollars to just verify my information that is already on file to pay my bill? WOW! but hey she could send me back to the tella-prompt and they could do it free of charge. Damn phone company! That is my vent!
Next time I will post my new recipe. What we are currently doing on the house and what is coming up this weekend
Also you ask why don't I just set up direct deposit? We did that! They took money (for that matter is hardly every matched up to my bill) out of my account on random days and not the day it was due. My bill is due on the 1st and sometimes it would be the 27th sometimes the 31st sometimes the 29th. It varied and it did not work.
